红丝绒蛋糕一般会加酪乳和白醋,因为可可粉中的花青素遇酸变得色彩红艳,如果和我一样使用碱化可可粉,加入酸性食材就没有什么用了。
酪乳在中国很难买,所以就省略了。
Most red velvet cake has buttermilk in the ingredients. Because natural cocoa powder become red when touching acidity material. But I am using dutch processed cocoa powder, so I skip the buttermilk which is also hard to buy in China.
