Here is one of my favorite foods! I love seafood and calamari are surely in the top three! . There are countless ways to prepare calamari but one thing has to be sure in all recipes! They have to be fork tender! How to achieve that? . When cooking, roasting or frying calamari always make sure to have a really high heat. Don't get me wrong - don't pulverize them with the heat! But really, calamari have a delicate meat and there are in my experience just two options. High heat for just a few minutes (what we've done in the recipe), or low and slow. . In this recipe we stuffed them with fried tentacles and onions, fresh parsley, mozzarella cheese, egg yolk, bread crumbs and salt to taste. And you can always put some garlic or other spices to taste in the filling if you like it that way! . For me, that's the go to filling for stuffed calamari. . In Slovenia it's popular to stuff them with cheese and prosciutto but this, in my opinion, is to strong for the mild calamari taste. But in the end it's up to you and your preference! .
