Creamy Vegan Carbonara
Carbonara is an Italian pasta dish from Rome made with eggs, hard cheese, cured pork, and black pepper. The dish arrived at its modern form, with its current name, in the middle of the 20th century.
The creaminess is achieved with the egg in the carbonara without actually using the cream and since this is a VEGAN Recipe, we are going to make it with mushrooms and cashew cream :)

๐ฟIngredients๐ฟ
Pasta - 300g
Mushrooms - 400g
Soy Sauce - 1 Tbsp
Olive Oil - 1 Tsp
Vinegar - 2 Tsps
Agave - 1 Tbsp
Cashews - 150g
Nutritional Yeast - 2 Tbsps
Cooked Garlic - 6 large Cloves
Lime Juice - 1 Tsp
Soy Milk - 350 ml
Salt - 2 and half tsp
Parsley as needed
๐ฟSteps ๐ฟ
๐๐พ Cook the Pasta
๐๐พPrepare the sauce mix - to a bowl add, olive oil, vinegar, agave syrup, soy sauce and mix
๐๐พThen heat a pan, add chopped mushrooms. Add the sauce mix, cook till the mushrooms are well done
๐๐พAdd the cooked pasta, let the pasta soak the mushroom sauce
๐๐พPrepare the vegan cream base - to a blender, add soaked cashews, cooked garlic, soy milk, nutritional yeast, lime juice and blend everything
๐๐พAdd the creamy sauce to the pasta, flavor with salt and pepper
๐๐พMix well
๐๐พGarnish it with fresh finely chopped parsley and freshly ground pepper
