Heavenly Mackerel With Avocado Puree And Pickled Onions | Little Kitchen

Some time ago I figured that avocado purée goes perfectly with any kind of fish that has a strong flavor. I'm not talking about a fishy flavor here! But meckerel has dark strong flavored meat like tuna! And that's no coincidence since they are actually close relatives! . Anyway the avocado perfectly balances with the strong flavor of the mackerel and the pickled onions give the whole dish some acidity and another layer of texture. . This time we started the recipe with a brine. A cup of water and a cup of vinegar. A spoon of salt and a spoon of sugar. Fresh parsley, slices of lemon and red onions. Quite straight forward! Get the brine to boil and remove some of the onions for later garnishing. Put the brine aside and let it cool down! . In the meantime you can fillet the mackerel or you can buy mackerel fillets. We didnt have the second option so the first it was! . Put the fillets into the cool brine and let them soak up al the flavor for 10-15 minutes. . Put them in a hot pan for a few minutes (2 to 3 minutes per side) and when finished serve them with avocado puree and pickled onions! . Delicious, simple and easy to make! .
