Pumpkin Risotto With A Crispy Trout Fillet | Little Kitchen

Now that's one really simple and delicious dish which we elevated with a sprinkle of pumpkin seed oil. . Did you ever try 100% pumpkin seed oil? The really good stuff? . Here in Slovenia we use it quite a lot, especially for salads! . But we're in 21st century so why not try something new! Right? . This time we used pumpkin seed oil to bring another layer of flavor to the pumpkin risotto and gosh how well the combination played out! . So why did we use trout opposed to another fish? . Trout has a stronger flavour opposed to saltwater fish. The trout we used had also red meat hence why the stronger flavor. And thus it is a better choice to complement the stronger flavour of pumpkin seed oil and sweet but light pumpkin rissoto. A typical saltwater white fish meat would become simply overflavored and that would lead to an imbalance in the dish! . But hey! That's my opinion and if you don't like freshwater fish use something else! ๐Ÿ˜Š . Or nothing! And enjoy a simple but delicious squash risotto! . So what are your thoughts on this recipe? .
