Fried Eggplant, Burnt Carrots With Celeriac Puree | Little Kitchen

Here is a very simple but delicious vegan friendly (when using vegan butter) dish! . When cooking with celeriac always choose the smallest one you can find. Celeriac in the size of your fist has the most flavor! Then you peel it and slice it into cubes. Cook the celeriac in salted water for about 15 minutes and it should be fork tender! When cooked you blend it with some butter and you get this godly smooth purée! . When frying half of an eggplant in a pan you should cook it sloooowly. Take your time! Since otherwise it will be still raw in the middle. And when possible, use a bigger pan then I'm using! I guess it's a good idea to have a bigger pan for me too... Anyway, before frying you should generously salt the eggplant. We used sea salt with chili and pumpkin seeds since it gives another layer of flavor to the dish and also some kick! . So guess why did we fry the sage leaves in butter before we put the eggplant and carrots in the pan! . So what do you think of this dish!? .
