One of the things that I like about beetroot is its broad use in recipes. It has a sweet flavor that goes perfectly with sour ingredients, hence why we here in Slovenia often pickle it! ๐Ÿ˜Š . But of course you can make all sorts of dishes out of beetroot. This time we made a purรฉe out of pre-cooked beetroot! . We served it with roasted cheese and colorful carrots and a sprinkle of lemon juice. It was the perfect early fall salad! ๐Ÿค— . Ps: apart of the flavor I think the next best thing about it is absolutely the color! . What's your favorite beetroot recipe?
