I love dishes with eggplant! Mostly I prepare them just with salt and garlic but this time we made something different. . We stuffed the roasted eggplants with cooked buckwheat, fresh feta cheese, diced and roasted eggplants, salt, lemon juice and fresh basil. And we topped everything with a splash of orange flavored @oliveoilmorgan for a little bit of extra extra ๐Ÿ˜‹ You could say it's a warm buckwheat salad with eggplant! Or... A Warm eggplant salad with buckwheat! Either way it's a healthy and fresh dish that you can serve as a side dish or a main course!๐Ÿ’ช . As you may see, we don't want to give you the specific quantities of each ingredient. We want you to experiment, cook, try and test! Go get dirty! . Though we can give you a tip! Make sure you salt the eggplant slices 10-15min beforehand. The salt will suck out the bitter liquid from them and make them extra tasty! . Also a small tip when shopping for eggplant: buy the ones with rounded spot on the bottom side! That's a male ๐Ÿ† and doesn't have as much seeds! .
