Spinach and Cheese Quiche Recipe | Mamagician

This easy spinach quiche recipe has a flaky crust, silky custard texture and lots of melty cheese and its super easy to make.
Ingredients:
For the crust:
2-1/4 cup or 280 grams All purpose flour
3/4 cup or 170 grams Cold butter
1 tsp Salt
4-5 tbsp Chilled water
For the filling:
3 eggs
1 cup or 240 ml Heavy cream
1 tsp Salt
1 tsp Black pepper
2 tbsp Butter
1 tbsp Cooking oil
1 Large diced onion
1-1/2 cup Spinach
1 cup Mozzarella cheese
Cherry tomatoes
Method:
Mix together all purpose flour, butter & salt until sand like texture. Add chilled water 1 tbsp at a time until you get a soft dough. Cover & chill in the fridge for 30 minutes .Take out & roll into a sheet . Place in a pie pan .Prick holes with a fork .Cover with butter paper & beans for blind baking. Bake for 15 minutes at 175 C & then remove beans & butter paper & further bake for 10 minutes.
Heat butter & oil in a pan . Saute' onion & add spinach. Cool slightly. Mix eggs, heavy cream , salt and black pepper in a separate bowl . Add mozzarella cheese at the base , spinach mixture & egg mixture. Bake for 35 minutes in a 175 C oven . Enjoy:)
