Sapin-sapin is a layered glutinous rice and coconut dessert in Philippine cuisine. It is made from glutinous rice flour, coconut milk, sugar,water, flavoring and coloring. It is usually sprinkled with latik or toasted desiccated coconut flakes. But now there's a lot of version of Sapin Sapin and one of those is my recipe. The flavorings that I used here is based on my panglasa. I love the taste of Ube, vanilla, banana and pandan that compliments each other .My family loves this version of Sapin sapin. I hope you try it too... INGREDIENTS: 2 cups glutinous rice flour 2 cups coconut milk 1 can condensed milk (395g) 1/2 cup sugar FOR THE FLAVORS UBE: 1/2 tsp Ube Essence 2 drops Purple food color WHITE: 1/2 tsp vanilla Sugar YELLOW: 1/4 tsp banana essence 2 drops Yellow food color GREEN: 2 drops Pandan Essence 2 drops green food color
