Tofu and Crab Scrambled Egg (豆腐蟹肉炒鸡蛋)

This scramble is extremely tasty and easy to make! You may associate crab meat with crab cakes or salads, but this combo is just as (or even more) delicious. Give it a try and you may be surprised! Crab cakes: https://www.youtube.com/watch?v=mrSLSUQr2T8&list=PLelr1VdPVYhXgPLPQygeBiduyjGm0JiqL&index=2 INGREDIENTS (4 servings): - 5 oz. jumbo lump crab meat - 2 eggs, whisked - 1/4-1/3 block of firm tofu, cubed - 10g ginger strips - 1 stalk chopped green onions - 1 tsp. salt - 1/8 cup oil DIRECTIONS: 1. add 1/8 cup oil to pan on medium heat 2. fry your ginger strips in the oil until they brown, then discard 3. coat tofu and crab evenly in whisked egg 4. pour into pan and cook until the bottom is golden brown 5. flip and cook on the other side 6. add in green onions and salt 7. break apart the eggs and stir fry until green onions and salt and evenly distributed 8. serve and enjoy!
