炸酱面 Zhajiangmian

Noodles topped with a delicious, savory zhajiang sauce and fresh diced veggies! The zhajiang sauce is made by simmering stir-fried pork with salty fermented soybean paste. Zhajiang also means "fried sauce" in Chinese (Wikipedia). INGREDIENTS: - 1 lb pork tenderloin - 2 tbsp huangjiang (soy bean sauce) - 2 tsp sugar - 4 tsp cooking wine - 5g (~1/2 tsp) Sichuan peppercorn - 2 green onions (white parts only) - ~7 slices of ginger - 4 servings of noodles - Cucumber - Carrot - Edamame - 1 egg - 1 tsp soy sauce - 1/4 cup olive oil - 2 tsp corn starch DIRECTIONS: 1. dice the pork tenderloin 2. add in half of the cooking wine, soy sauce, corn starch, whisked egg and mix well 3. pan fry the sichuan peppercorn and ginger slices separately in oil on medium heat 4. add the pork tenderloin into the oil and break apart into pieces with spatula 5. when the pork is mostly brown on the outside, add in half of the green onions, cooking wine, sugar, and soy bean sauce 6. stir fry until the soy bean sauce coats all the pork evenly 7. add in the remaining green onions and stir fry until they are evenly dispersed. your zhajiang sauce is done! 8. cook the noodles of your preference 9. top the cooked noodles with diced cucumber, carrots, edamame, and the zhajiang sauce. 10. mix the zhajiang sauce evenly with the noodles and enjoy!
