This pavlova is light, airy and filled with all the best summer fruits. A sweet end to a sweet day! It is crisp on the outside and marshmallowy soft inside. INGREDIENTS 250g icing sugar 4 egg whites 2 tsps of cornflour 1 tsps of white wine vinegar 400ml of cream, whipped 250g of mixed fruits Preheat the oven to 150°C/300°F. Line baking tray with baking parchment. Place the icing sugar and egg whites and whisk on high for 10 minutes until glossy white peaks form. Using a spatula, gently fold in the cornflour and the white wine vinegar. Spread the meringue mixture on baking tray and using a tablespoon, form large meringue disc. Bake for 45 minutes, remove from the oven and allow to cool completely. Top it up with fresh whipped cream and fruits and nuts. #pavlova #dessert #fruity
