Salmon 2 ways

1. Clean the salmon and peel it. Keep the skin. Place on an oven tray, seasoning with salt. Spread olive oil well. Cover and press on top. Transfer to the oven, and bake at 375oF/190oC for 30 minutes. 2. Meanwhile, seasoning the meat with salt and pepper on both sides. Set aside. 3. Warm up a skillet with medium-high heat, put in butter and salmon. Sauté well. Add in minced shallot. Whisk in white wine and heavy cream. Seasoning with salt and pepper. Transfer to the serving plate. 4. In the same skillet, sprinkle some parsley and mix well with cream and butter as sauce. Baste on the cooked salmon. 5. As the final step, place the roasted fish skin on the top and serve immediately. Enjoy! 1. Put the potatoes in a large pot with boiling water, sprinkle some salt. Cook for 15 minutes. 2. Meanwhile, carve the surface of salmon. Season with salt and spread olive oil well. 3. Warm up a skillet with medium-high heat, pour in olive oil. Put in the salmon and saute well. Seasoning with salt and pepper. Transfer to a plate. 4. In the same skillet, add some cherry tomatoes and minced scallion. Seasoning with salt and pepper. Transfer to a plate. 5. In a large bowl, put in the cooked potatoes, mash well. Seasoning with salt and pepper. Pour in milk and mix well. Transfer to the serving plate. 6. Place the cooked salmon on the mashed potatoes, garnish with cherry tomatoes and parsley.
