1. Mix the ground meat with minced ginger and minced scallion in a large bowl. Seasoning with salt and pepper. Add some water. Mix well. Set aside.
2. Beat an egg in each of small bowl. Use chopstick to poke a small hole on egg yolk to fill the minced pork inside. (Note: Please poke the hole on the specific spot which looks like an eye on the egg yolk. Do not break the egg.)
3. Warm up a skillet, pour some cooking oil, place on the egg, pan-fry as over-egg. Transfer to a plate.
4. In the same skillet, turn to high heat, add in chopped scallion, chopped ginger, sliced mushrooms and chopped tomatoes. Stir-fry a while. Seasoning with salt, pepper and soy sauce. Pour in some water and place back the over-egg. Cover the lid. Cook for 5 minutes.
